I have carried a Victorinox Swiss Army knife for years. The steel will hold an edge for a long time with everyday cutting chores, however if you are cutting hard things or abuse the edge then it will dull quickly. I never allow my knife to dull since I carefully check the edge after each use or day and re-strop the edge if it needs to be. The key is regular maintenance.
There’s one sitting right next to me on my desk that I’ve been using for years. The edge is good and lasts, and I’ve used one of those v-shaped knife sharpener things to touch it up when it’s gotten a little dull. I use it for everything from opening packages to pruning garden plants.
Victorinox is stainless steel, a hard metal. Therefore, the edge stays sharp for a long time, but is harder to sharpen than a high carbon knife. A great advantage to Victorinox is that it does not rust, unlike high carbon steel knives. Since they are lightweight and versitile, I have carried Victorinox for decades.
If you sharpen it when you first get it the knife will last you quite a while. Depending on how often you are completing major tasks as described by you. The blade will still cut even as it dulls a little.
